Chilling Pasta for Later Use

Only use high-quality 100% durum semolina pasta if it will be refrigerated for later use. The gluten quality must be strong to handle being heated twice without falling apart.

  • Cook the pasta until it is slightly under-cooked.
  •  
  • Immediately immerse pasta in cold water after draining.
  •  
  • Add a small amount of vegetable oil and gently toss.
  •  
  • Cover and refrigerate immediately, but keep refrigerated no more than 48 hours.
  •  
  • Re-heat pasta by dropping in boiling water for 1 minute or less.
  •  
  • Drain slightly.
  •  
  • Quickly add pasta to a warm sauce in a sauté pan over medium heat for 1 minute or less.
