Rotini with Tomatoes & Bacon

  • 2 Pounds of Ripe Tomatoes
  • 8 Slices of Bacon
  • 1 Head of Garlic
  • Extra Virgin Olive Oil
  • 10 mushrooms
  • 1 pound of Rotini
      1.   Peel and coarsely chop one head of garlic, fry in olive oil.
      2.   Plunge tomatoes into boiling water for one minute and then into cold water.
      3.   Peel tomatoes and coarsely chop. Add them to the garlic.
      4.   Fry bacon and mushrooms in bacon drippings.
      5.   Add to tomato mixture.
      6.   Cook Rotini & drain.
      7.   Toss with tomato/bacon mixture.
      8.   Garnish with chopped green onions and fresh parmesean.
      9.   Serve.
