Costa Red Chili Penne

  • Salt
  • Freshly ground black pepper
  • 1 lb COSTA Penne
  • ¼ cup olive oil
  • 1 red onion, finely chopped
  • 1 clove garlic, finely chopped
  • 8 stalks Swiss chard or spinach
  • ½ cup freshly grated Parmesan cheese
  • 3 ½ oz coppacolla or smoked bacon, diced
  • 1 small red chili pepper, seeded and finely chopped
      1.   Cook the pasta in boiling salted water while preparing the chard mixture.
      2.   Heat the oil in a frying pan and add the garlic, onion, chili and coppacolla.
      3.   Cook for 2 minutes.
      4.   Wash Swiss Chard or Spinach, remove the hard stalk and shred.
      5.   Add the chard and stir-fry until the chard just starts to wilt.
      6.   Season to taste with salt and pepper.
